Castellare di Castellina came into being when Paolo Panerai merged four farms (Castellare, Caselle, San Niccolò, and Le Case), intending to produce the best quality wine possible, whose history, even in its buildings, was crafted by tradition.
Over the years, the Castellare winery has grown and today produces about 400 thousand bottles. It has 80 hectares in the heart of the Chianti Classico zone, including 20 olive groves.
There are 33 vineyards on the hills of this natural amphitheater that faces southeast at an average altitude of 370 meters above sea level. The vineyards are between 7 and 45+ years old. The yield per hectare at Castellare is very low in order to achieve the highest quality.
No synthetic chemicals are used in Castellare’s vineyards in deference to nature and the production of organic wines. This philosophy is supported by the labels, which bear a drawing of a different bird each year. However, unfortunately, the birds, too, are becoming increasingly rare because of the indiscriminate use of poisons and herbicides in vineyards.
